Leila’s Amazing Pot Roast

Serves 4-6

Ingredients-

  • 3-4 lb. Chuck Roast
  • Olive Oil
  • 1 Large White Onion, diced
  • 3 Garlic Cloves, minced
  • 1 # bag of Baby Carrots
  • 24 oz bag Tiny New Potatoes, left whole
  • Equal parts beef broth and tomato juice (enough to cover the roast)
  • 2 T fresh thyme, stems removed, roughly chopped
  • S/P

Preparation-

Pre-heat oven 325 degrees. Generously salt and pepper the roast and rub in 1 Tablespoon thyme leaves on both sides.

On the stove, high heat, put a little oil in your dutch oven (or heavy pot) sear the roast on all sides. When the meat is beautiful- brown set aside on a plate.

In the same pot, add more oil, onion, garlic and 1T thyme. Sauté until golden (medium-high heat).  Add the meat back to the center of the pot and stir in potatoes and carrots around the roast and on top if necessary…

I would like to clarify my previous post as I think some people may have misinterpreted it. What I am talking about is not politics. I am not talking Democrats and Republicans. We are a democracy and we have free speech. On Tuesday, the American people voted for compromise and action, and the President calls on Congress to come together in that spirit to help create jobs and strengthen our economy.

Telling Abbie the results of the election. Thank you all for such wonderful support! Abbie is a most amazing little girl–brilliant, gorgeous and hilarious. I am so proud of her, and cannot believe how privileged I am to have her as my daughter. This has been a fun ride, and we are amazed at all that has happened. Department of Transportation Assistance: With hurricane recovery efforts underway, the Department of Transportation is also working with state and local officials to help commuters get where they need to go  and ensure families have access to housing and other resources. FEMA on the Ground: On Tuesday, FEMA personnel continued working alongside state and local partners with disaster response and recovery operations throughout the areas impacted by Hurricane Sandy. They also began preparing additional resources for the Nor’easter storm. Rebuilding Businesses after the Storm: Earlier this week, the Small Business Administration encouraged business owners affected by Hurricane Sandy to apply for SBA disaster assistance. SBA Administrator Karen G. Mills explained, “Getting businesses and communities up and running after a disaster is our highest priority at SBA.” Businesses of any size, as well as homeowners and renters in areas within a disaster declaration (New York, New Jersey, or Connecticut), may be eligible to apply for SBA disaster assistance. Learn more about SBA disaster assistance here.

 

 

 

Storm Relief Update: On Saturday, the President met with FEMA leaders and Cabinet officers in Washington DC to ensure all those impacted by Hurricane Sandy know that help is available for them. I watch a lot of LinkTV, but I’ve discovered that a lot of people do not know about LinkTV. So here’s a short description of the network that I will use as a reference for people who read my posts about things I’ve learned there.

LinkTV is a non-commercial station. They get funding from donations like PBS and NPR, but without the Corporation for Public Broadcasting support. They receive money from individuals as well as grants from foundations. Here’s the statement from their funding page:
