Curried Leg of Lamb Pot Pie


This recipe for Curried Leg of Lamb Potpie gets five stars in my book. It’s full of flavor and a very tender cut of lamb.

I went the non-traditional route and served this as my Thanksgiving meal this year instead of turkey. Give it a try this holiday season. I promise you won’t be disappointed.

Ingredients:

For the Pastry Dough:

  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 tsp salt
  • 1 stick chilled unsalted butter, cubed
  • 1/4 cup ice-cold water

For the Potpie Filling:

  • 3 TBSP olive oil
  • 2 lbs. leg of lamb roast, cut into 1-inch cubes
  • 1 white onion, diced
  • 5 small turnips, diced
  • 2 cups peeled butternut squash, cubed
  • 2 cups Tuscan kale, chopped
  • 1 cup crimini mushrooms, chopped
  • 2 medium carrots, chopped
  • 2 tsps curry powder
  • 1 can unsweetened coconut milk
  • 1/2 cup dry white wine

  1. Why; yes Mr. Jueseppi; I do like lamb as a matter of fact.
    This does look great. I think I’ll try this. I had a leg of lamb for Thanksgiving and my whole family loves lamb; and curry. My wife just walked in and she is exstatic.

    • Your wife has good taste, in husbands and cuisine. I’m trying this recipe Friday afternoon, only I’ll omit the pie crust part so I can eat more lamb stew, I’ll just use the lamb stew part. That way I don’t anger my diabetes with the pie crust.

      Let me know how it comes out for you if you make this one.

      • I was considering doing the same thing but my wife may want to make the whole pie. If so; I’ll see if we can’t do both. I love the pot pie idea but my experience is that they tend to be very rich. Ok when I was younger but now i try to avoid things too rich. Bad for the stomach and my Diabetes though mine is pretty nicely under control at last check. I had an A1C of like 5.9. You probably know that 7 is the goal for diabetics so I’m doing Ok for now. Anyway; I digress. I’ll let you know how it turns out.

      • Thats a very good a1c. I gave up months ago with the control thing, my eyesight is going and I am nothing close to the man I was a year ago. I decided to enjoy what life I have left and skip the doctors & crap. Quality of life over quantity of life for me. I don’t have a wife or family to have to stick around for so I won’t be hurting anyone when I go. I can be selfish.
